Wilma's Fruit Cake
1 lb. 6 l/2 oz. sweetened, condensed milk
15 oz. dates (ground)
1 tsp. each vanilla & rum flavoring
15 oz. glazed pineapple (I evade chemical taste by placing canned  [drained] or fresh slices in a pan, covering with sugar, and slowly heating.  Drain the juice.  Repeat until the slices are glazed.)  Cut into small pieces.
1 lb. 6 1/2 oz. pecans (halves or pieces)
5 oz. green maraschino cherries & 10 oz. red maraschino cherries

  • Starting with condensed milk add each ingredient (in the order they are listed above) one by one, mixing well each time.   Let stand 1 1/2 hours.
  • Pour into round pan at least 8 1/2 inches diameter, removable sides, lined with parchment paper.
  • Decorate with pecan halves & maraschino cherries.
  • Bake in 275 F about 55 minutes.  The condensed milk caramelizes, and the top should be firm to touch, glazed, and golden brown.
  • Remove from oven and let stand until it cools enough to hold together, about 20 minutes.
  • Remove sides, cool, and move onto sezrving plate (having removed parchment paper).
